5 Days Strong

Today it was a struggle to get outside for some “real” exercise. I managed to get out for a good speed walk. It was a cloudy day but it turned out to be a beautiful evening. So this vegan triathlete went for a good walk fighting the mosquitoes and felt better. I was not feeling well today so it was hard. I did it, though, and the sense of accomplishment is great. Day 5!

My 40-day challenge is coming along well and I’m  happy with my daily exercise goal. I’m not going to lie, this weekend was weak in terms of actually doing any exercise. One day was literally 10 minutes of core workout and one day was about 15 minutes of stretching. Those count! They count because I have put no restrictions on this challenge!

It was a rare weekend at home, which usually means being busy at home. It sure was. On Friday, we had a 12-year-old birthday sleep-over party. We had pizza on Friday, with mine having Daiya* on my vegan pizza. On Sunday we had a little family lunch-supper meal with all the kids and my hunny. We gave him his present, which he loved: a Go-pro3! He has been wanting one for many months and wouldn’t buy it for himself. We decided it would be a great gift for him and he really appreciated it. Then I made lasagna with veggie ground round and Daiya (for me) and regular cheese for the others. It was a big hit.

The lasagna I make is so ridiculously easy it’s not even funny:
Sauce: onions, garlic (sautéed), pasta sauce and veggie ground round – this shouldn’t be too runny (you can put other vegetables in it as well if you want)
To make: layer of sauce, layer of noodles (I don’t recommend the oven-ready noodles, but it’s good to try it out for yourself), layers of sauce, optional layer of veggies like chopped peppers, chopped zucchini, or spinach, Daiya cheez, noodles, sauce, Daiya cheez.
Let cook for 20 minutes or so. You can cover it with tin foil for the first 15 minutes and than take it off to melt the top cheez.

Daiya “cheez” is a wonderful product that I consume on a regular basis. It is a soy-free vegan cheese alternative. After 11 years of veganism, I had consumed a ridiculous amount of disgusting cheesy alternatives.
