Weekend Recipes!

Last week I made a wonderful meal of steamed veggies (peppers, onions, and spinach) on top of quinoa with a simple tahini dressing/sauce (tahini, garlic, Bragg’s). It was delicious when warm and then the next day for lunch when it was cold.

Last weekend I made some delicious dahl from my new Forks Over Knives cookbook that I got from my sister for Christmas (Thanks Ash!). I was planning to make home-made naan to go with the dahl, but I got lazy and had a double lentil meal with some lentil rolls a friend randomly gave to me earlier that day. I had an afterthought that it would be good with quinoa. By the time I made the quinoa, I was full, so I ate it the next day with the cold dahl (I don’t have a microwave) and it was STILL delicious! Dahl is a great meal and can be eaten for a few days. That is just one of the awesome pluses about vegan food is that it takes a long time to go bad!

This week I had an unexpected weekend at home because of bad weather cancelling my plans to see my beau who lives out of town. It’s maybe a good thing that I stayed home and that it was hella cold outside because I had a long to-do list of indoor tasks that needed to get done. I’m not going to lie, but my food intake hasn’t been the best this week/weekend. When I needed a quick, easy, and filling lunch, I made banana pancakes (a recipe I memorized from How it All Vegan – my most used vegan cookbook ever) and I made them all for me! I made BIG HUGS pancakes! Three of them. And I ate them all! I hardly ever make them just for me, so it was kind of a treat. Here they are in all their glory:

    Have you heard of the cook book Vegan Cooking For Canivores? It is written by the personal chef for Ellen DeGeneres And Portia DiRossi. It has some of the best recipes I have tasted. Another favorite of mine is The Vegan Table.
